Chicken Parmesan is the perfect comfort food. This lightened up version keeps all of the flavors of this classic, but it makes things easier and lighter by cooking it in the oven rather than frying it in oil. You will need: A baking sheet, a wire cooling rack that fits on the baking sheet, a frying pan (I prefer cast iron), four bowls, and the oven preheated to 400. It is also very beneficial to measure everything out and set up stations before starting.
