DwardCooks Chicken Parmesan 2019

Chicken Parmesan is the perfect comfort food. This lightened up version keeps all of the flavors of this classic, but it makes things easier and lighter by cooking it in the oven rather than frying it in oil. You will need: A baking sheet, a wire cooling rack that fits on the baking sheet, a frying pan (I prefer cast iron), four bowls, and the oven preheated to 400. It is also very beneficial to measure everything out and set up stations before starting.

Servings: 6 people

Ingredients

  • 3 eggs
  • 6 chicken breasts boneless skinless
  • 2 oz Panko breadcrumbs
  • 1 oz Parmesan cheese grated
  • 1 tbsp Dijon Mustard Meijer
  • 1 tbsp Cholula Brand Hot Sauce Chipotle flavored
  • 1 tbsp Italian seasoning
  • 1 tbsp Garlic powder
  • 2 tsp Ground chili powder
  • 1 tbsp Kosher salt divided
  • 1 tbsp Ground pepper divided
  • 1.5 cups Zero Point Pasta Sauce DwardCooks Recipe
  • 6 oz Trader Joes Lite Mozzarella Cheese Shredded

Instructions

  • Butterfly chicken breasts so you have 6 even breasts. Add all of these to a bowl and use a pinch of salt and pepper to season.

Set up your bowl stations

  • In bowl #1, add about a half a cup of flour and 1 tsp salt and pepper. *I weighed my flour before and after. I added 3oz of flour and used exactly 1 oz. every single time–trust me.
  • In bowl #2, add 3 eggs, dijon, and hot sauce. Scramble egg mixture and add 1 tsp of salt and pepper
  • In bowl #3, add bread crumbs, all seasoning, and Parmesan cheese.

Coating the Chicken

  • Dredge chicken in bowl #1 and pat chicken breast so excess flour comes off. Coat chicken in egg from bowl #2, then toss in bowl #3 until fully covered. Place breaded chicken on a baking sheet until all chicken breasts are coated. Spray both sides of the coated chicken breast with cooking spray.

Cooking

  • The goal of the pan frying is to get a good crunch, not to fully cook the chicken. Cook on both sides over medium heat until bread crumbs are toasted (about 30 seconds on both sides). Remove the chicken once the breadcrumbs are slightly golden, and add to a wire rack.
  • Place the wire rack on a baking sheet. This will allow air to circulate around the chicken and make all sides crunchy. Spray the wire rack with cooking spray before adding chicken breasts. Give the chicken one final spritz of cooking spray and cook at 400 degrees for about 20-25 minutes. Chicken should be cooked until 165 degrees. Juices will run clear when cut.
  • Once chicken is cooked, add about 1/4c of 0sp sauce to each chicken breast and top with 1oz of mozzarella. Place chicken back in the oven until cheese is melted.
  • Finish with a broil until cheese starts to bubble all golden and delicious.
