Indulgent Mac and Cheese

This is my indulgent mac and cheese--the not counting calories, preemptive lactaid, creamy and cheesy, holiday mac and cheese. I serve this for special occasions, celebrations, and it is always the meal I bring to loved ones who need extra love.

  • 2 lb. Elbow Macaroni
  • 1.5 lb. Cheddar Cheese
  • 1 lb. Monterey Jack Cheese
  • 3 oz. Parmesan Cheese
  • 8oz. Cream Cheese
  • ½ lb. Salted Butter + more for dish
  • 4 cups Heavy Cream
  • 1 cup Whole Milk
  • ¼ cup Flour
  • 2 tbsp. Hot Sauce
  • 2 tbsp. Dijon Mustard
  • Kosher Salt


    1. Boil pasta in heavily salted water 2 minutes under al dente.
    2. In a separate pot, melt butter and whisk in flour to make a roux.
    3. Add hot sauce, dijon mustard, and slowly add in heavy cream while whisking.
    4. Turn heat low and add cream cheese and whisk until smooth.
    5. Add in ⅓ of the shredded cheese and whisk until smooth.
    6. Add milk and whisk until smooth.
    7. Add ⅓ cheese sauce to the bottom of the pan.
    8. Add macaroni, shredded cheese, and more cheese sauce. Continue the layered pattern until all macaroni and cheese is in the dish.
    9. Bake at 350 F for 20 minutes and finish with a broil until bubbly.
