Breakfast for dinner is simply magic. I’m pretty sure you have all of the ingredients at home to make our simple french toast. Everyone in your home, even the kids, will love this.
For even more fun, make this in the shape of muffins.
French toast is, of course, a classic breakfast food that can be used so many ways. With some alterations, the recipe can be remixed as french toast breakfast muffins or even made ahead as a casserole.
This Christmas, I set one up the night before while my wife worked on our kids’ new toy kitchen, and in the morning, all that we had to do was pop it in the oven.
My kids played with their toys, and the house filled with the smell of comfort and cinnamon. Prepping the meal ahead gave us more time for family memories.
Further, this dish is healthy without “feeling” healthy. Any time I can lighten up a popular dish without my kids noticing is a win for me.
Great at any time of day
This is what I cook when I don’t feel like cooking. Or food shopping. Or getting out of my pajamas on a Sunday morning. This isn’t for a wacky, bougie french toast.
This is a simple, foolproof, family-who-sometimes-resents-me-sneaking-cauliflower-into-things-approved dish.
When I serve this, I cook up some eggs and center-cut bacon from Wegmans to round out the meal and add some extra protein. This breakfast at any time feast can be dressed up with some fresh fruit, and it all comes together as a low-point meal that the whole family loves.
Simple French Toast
- 1 c cashew milk
- 4 eggs
- 1 big pinch on cinnamon tbsp-ish
- 1 smaller pinch of nutmeg tsp-ish
- 1 tinier pinch of salt 1/2-1 tsp
- 1 tbsp pure maple syrup
- 1 tsp vanilla
- 10 slices Schmidt 647 Italian bread
