As you may know, my wife and I are both high school English teachers. Consequently, this means lots of grading, early mornings, and busy after school hours. The healthy biscuit recipes below stand out as essential meal prep options when we plan our week.

Planning the week with Healthy Biscuit Recipes

Our meal planning sessions take place among legos strewn on the floor and screaming toddlers. And that's OK. My wife and I usually sit down, map out the events we have and check which nights will be "cooking nights" and which nights will be "weeknight meals."
A "weeknight meal" night typically means popping something in the oven that consists of a pre-cooked protein, sauce, and whole-wheat pasta. Also, If I'm adulting extra hard that week, I might have a pre-assembled casserole ready to be heated.
Check out my Italian Sausage Pasta Bake, Chicken Cordon Bleu Casserole, Sun-dried Tomato Alfredo, or One-Pot Alfredo Pasta if you're looking for recipes like these, for instance.
Biscuit basics: Equipment you need
My cast iron frying pan is one of my most-used and versatile cooking staples. I love the way that it keeps a consistent temperature. Honestly, it makes me feel a bit fancy when I cook with it.
I use this dough scraper when I want to cut the biscuits right in the pan or to shape scones. Also, it helps me to shape biscuits for my bacon, egg, and cheese sandwiches (see below).
Biscuit cutters are a must for shaping perfectly round and well-sized biscuits, and I love using them for my one-pot chicken pot pie (see below).
Meal Prep Time!

I've experimented with different breads and buns during my cooking journey. For example, I've tried three-ingredient dough in many forms. Further, I've worked with different brands of store-bought bread, bagels, and English muffins.
I've found over time that the SmartPoints investment for most carbs doesn't always match the satisfaction that I get from eating them. I'm a carb-lover. You've seen the commercials, right? I like pizza, and I love me a good sandwich.
(Try the Three-Ingredient Dough pizzas if you don't believe me.)
As a result, I experimented until I found the best vehicle for a sandwich that is satisfying and healthy. That is worth it.
Biscuit Dough for the Win

My biscuits use real butter and real flour. Thus, when you bite into them, you get the flaky, satisfying and slightly salty bite for which biscuits are known.
If you've seen my earlier Southern-inspired cornbread and grits, you know that I'm not messing around with making pale imitations of otherwise delicious foods. I want the real deal.
Healthy Biscuit Recipes
Whether meal prepping or just looking for a standalone treat, these healthy biscuit based recipes are an essential part of my cooking and the base for some of my favorite meals!
This chicken pot pie is maximum comfort food. Creamy, hearty chicken pot pie topped with buttery biscuits make this the perfect bowl of winter comforting goodness.
These flaky, buttery, and surprisingly easy to make WW friendly, light biscuits will be your new favorite weekend breakfast treat. At 3SP per biscuit (2 for 5sp), these are perfect.
Pumpkin scones are the perfect fall treat to enjoy on a nice, slightly chilly fall morning before doing all the fall things like picking apples or hayrides… or just eating while wearing sweatpants and being antisocial and scrolling through Instagram waiting for your coffee to kick in.
Blueberry scones are a coffee shop classic–they’re slightly sweet, slightly soft and cakey, and a perfect companion to a morning cup up coffee. The pops of sweetness from fresh blueberries mixed with the brightness of the lemon zest and are a classic combination you and your family will love. Best part? These real-deal sized scones are only 5 WW SP per blueberry scone!
Meet your new favorite snack, lunch, freezer meal, and party appetizer, the Cheeseburger Biscuit Bomb. Using lean ground beef, my biscuit dough and my good friend processed American cheese product, these Bombs are 5sp for 2 (3sp for 1) and they are… the bomb.
A crispy and juicy chicken sandwich on a buttery and flaky biscuit topped with tangy and bright slaw and creamy and smoky chipotle mayo is the height of indulgent comfort food, but this take on it is a fraction of the points because of the air fryer.
Bacon, egg, and cheese biscuit sandwiches are my all-time favorite breakfast sandwiches. Unlike the McDonald’s ones that clock in at a whopping 14sp, these are only 6sp of pure breakfast bliss. Easily prepped on a Sunday during meal prep, these will last until Thursday morning in airtight containers in your refrigerator.
