    Brunch Pizza with Prosciutto

    This is the pizza equivalent of living your best life. The salty, delicate prosciutto mixed with the sweet caramelized onions, bitter spiced kale, and creamy egg yolk makes this Bougie Brunch pizza a celebration of the best food has to offer. TREAT YO SELF to this pizza any time of day.

    Brunch Pizza

    Fact: I have caramelized onions in my fridge most weeks these days. I can't get enough of them. I also recently discovered how low in points Citterio Prosciutto di Parma is for WW. It is a lean 1sp for two slices. I have been living my best life ever since.

    The proscuitto is amazing on its own. It is imported from Italy and sliced thin and packaged fresh. You can find it Citterio products by searching in their website here.

    I buy mine at Trader Joe's or the double pack from Costco. It is Incredibles indulgent on it's own, but on pizza... You'll never go back to typical pepperoni or sausage.

    Truly, good at any time of day

    This pizza is great for a brunch, however, it is also a great leftover remake if you plan your week right. Those of you have followed me for a while know I love caramelized onions. I often buy kale for soups or to saute in a quick pasta. This is the best, most decadent way to enjoy leftovers.

    You can make this as one large pizza or you can do this in individual servings, and live your best life. We've also created a pizza recipe using zero-point turkey sausage (and possibly pepperoni) if you're looking for something more traditional.

    DwardCooks Brunch Pizza with Proscuitto

    5SP for half and 9SP for a WHOLE pizza made with the famous three ingredient dough.  This pizza is great for a brunch, however, this pizza is also a great leftover remake if you plan your week right. Those of you have have followed me for a while know I love caramelized onions. I often buy kale for soups or to saute in a quick pasta. This is the best, most decadent way to enjoy leftovers.

    Ingredients

    • 1 batch of 3 ingredient dough
    • 4 slices of Citterio Prosciutto di Parma torn into large pieces
    • 3/4 c pizza sauce
    • 4 oz lite mozzarella I use Trader Joes
    • 1 bunch of kale leaves removed from stems and chopped
    • 1 clove of garlic minced
    • 1/2 c caramelized onion Check my Instagram story highlights for my 0sp technique
    • Balsamic Vinegar about 1-2 tsp
    • pinch of red pepper flakes
    • Shaved Parmesan

    Instructions

    Making the three ingredient dough

    • 1 cup Self Rising Flour (I use Medal)
    • 1 egg
    • 1/2 c Greek Yogurt (I use Fage)
    • Mix ingredients together in a stand mixer if you have one using your dough hook. If you don’t have a dough hook and a stand mixers, use a wooden spoon. Once the dough forms a ball, remove and place on a lightly floured cutting board.

    Add now for the pizza

    • Spray a pan with cooking spray and saute the kale, garlic, and red pepper flakes until the kale is wilted. Remove kale and place aside until you are ready to top pizza. This can be done in advance.
    • Preheat your oven to 500.
    • While the oven preheats, roll out your dough to your desired thickness on a floured cutting board or counter top. Whether you are using a cast iron or baking sheet, spray your pan with a little bit of cooking spray. I usually can can get my dough to take up most of a 11×17 baking sheet. If I am using my favorite 15″ cast iron, I roll it out the dough to roughly the size of the pan, transfer the dough into the pan, and use my fingers to shape & stretch it to cover the full bottom of the pan. Spray your pizza crust with a little bit of cooking spray.
    • Bake your crust for 5 minutes at 500.
    • After five minutes, take your pizza out and add your toppings. Sauce, 2/3 of the mozzarella cheese, onions, kale, remaining mozzarella
    • Put the pizza bake in for 10 minutes or until cheese is melted and the crust is golden. You can usually lift the crust and see the bottom of the pizza and check if it is done. You are looking for a nice, even golden brown.
    • I always finish my pizza with a high broil for a few seconds (depends on your oven, but I do mine for about 30 seconds) to get the cheese bubbly. The broiler can be scary for people who never cook or use a broiler, but it really finishes off the pizza to make it extra wonderful.
    • Cook 2-4 sunny side up eggs depending on portions. I always make 1 egg per person, because who doesn’t love an egg? Alternatively, you can bake the eggs directly on the pizza, but I like my eggs better this way.
    • Top the pizza with the torn Prosciutto di Parma, sunny side up eggs, shaved Parmesan, and a small drizzle of balsamic.
    • Live your best life!
